GSM comes from Saint-Chinian, a landscape defined by schist slopes, limestone plateaus, and ancient sandstone ridges. Mediterranean heat meets cool winds from the Massif Central, creating a climate that slows ripening and builds concentration in the grapes. The combination of elevation, exposure, and fragmented soils produces fruit with both freshness and depth. Many of the vineyards in Saint-Chinian are old, with parcels exceeding fifty years and some Carignan vines more than a century old. These deep-rooted vines offer naturally low yields and a clear sense of site. Garrigue vegetation surrounds the vineyards and subtly influences the aromatic profile of the grapes.

Made from Grenache, Syrah, Mourvèdre, and Carignan, it layers complexity, beginning with vibrant red and black fruits, a sharp tannic entrance, followed by deeper mature fruit and spices, and finishing with a pleasant, dry structure that showcases the wine's earthy and acidic qualities.
