Known as Norwegian Brown cheese, Gjetost is one of Norway’s most famous exports. Uniquely made from the whey of goats’ and cows’ milk this cheese is smooth and pliable. It has a distinctive sweet, caramel-like flavour.
The cheese itself is made by boiling down whey which has been mixed with cream. Cheesemakers in Norway have been producing Gjetost for over 200 years. It was seen as a great way to extract as much value from their milk as they possibly could.
Often eaten as part of breakfast by slicing it very thinly and layering it on waffles or toast, in Norway it is also eaten in chunks as part of a mixed cheeseboard.
