A powerful fruity Swiss cheese with the rind washed with a secret brine consisting of wine and spices. The purple label Appenzeller is matured for a minimum of 9 months but often longer than that. The wonderfully rich texture is aromatic, sweet and nutty with a wonderful crunch of protein crystals.
Edel means ‘noble’ or ‘premium’ and Wurzig means ‘spicy’ or ‘aromatic'.
