Tomme Brûlée is a unique cheese from the Basque region in France. It begins as a traditional Tomme de Pyrénées but undergoes a unique transformation where the rind is lightly caramelised, giving it a smoky, toasted exterior. This process not only enhances its rustic appearance but also adds a depth of flavour that is unmatched. The interior remains smooth and semi-firm, with a rich buttery taste that carries a hint of nuttiness and a subtle sweetness brought out by the caramelisation of the rind.
