Wrapped in Sycamore leaves and aged in a cave for optimum conditions. This blue cheese has a strong, very spicy, peppery taste and a lasting finish.

Also sometimes known as Valdeon cheese as it is from the Valdeon Valley of Castile-Leon region of northwestern Spain.
