A special maturation of limited quantity made by Xavier Fromager Affineur. Matured for nearly three years in the mountainside Fort St. Antoine. This is Comté at its most concentrated and complex.

This comte is turned, brushed and rubbed to develop the richness and sweetness so characteristic of this great cheese. Extra maturity brings a phenomenal depth of flavour, along with a satisfying crystalline texture.
