Traditionally oak smoked rind washed soft Irish cheese. Deep, subtly smoky and nutty tatse. The method of gentle smoking adds an extra dimension to the flavour.
Smoked Gubbeen is made by Tom and Giana Ferguson at Gubbeen Farm in Schull, County Cork.
The smoking system used was originally designed for salmon, however it has now been adapted to smoke their cheese. The process adds a sweet smokiness without being the overpowering presence in the cheese. The cheese has a deep flavour with a nutty, mushroomy base.
