Crottin de Chavignol
GOATS, UNPASTEURISED, FRANCE (LOIRE VALLEY)
Small and firm with an intense flavour. In its early stages it is creamy and has a subtle nuttiness. As it ripens the texture becomes more crumbly and the flavour intensifies. It can also develop a blueish tint to the rind which is perfectly normal and means a more complex flavour has developed.
