Made completely naturally and with minimum intervention. The grenache grapes, accompanied by a percentage of a wide ranging field blend undergo a short (4-5 days) static maceration, considerably less than most red wines. This results in a lighter coloured wine with softer and dare-we-say friendlier tannins. Fresh and fruit-filled on the palate with blackberries and violets this has great grip and structure as proof of its high altitude origins. Drink once opened and store with care (not fear) at a steady ambient temperature, preferrably around 16 degrees.
